What better way to celebrate the holidays than with a cheese board?
I am often reminded about a holiday gathering from years ago when I carefully crafted and then transported a fantastic cheese board full of local and international cheeses. It really was a lovely board, everyone was impressed, and it looked exquisite on the table surrounded by autumn fruits and vegetables.
Our small gathering had moved into the kitchen to pour wine when the extra-large family dog made a dash for the back door.
Hmmm…that was strange. Well, the dog thought the cheese board looked so delicious that he had to
help himself. Alas, large hunks of cheese on the board had disappeared! We were able to salvage some of the board although a couple of the guests were not too keen on trying anything after the dog had been the first to sample the cheese!
Fall and winter meals bring us different herbs, spices, fruits, and vegetables that make perfect cheeseboard pairings like sage, pomegranate, juniper, mustard, squash, cranberry, and cinnamon.
For your holiday board consider including an herbed-coated goat cheese, an aged cheddar, a creamy camembert, or a semi firm cow milk cheese with sage fresh from the garden and a sprig from the Christmas tree as a garnish.
The WNC Cheese Trail is lucky to have cheesemakers who use local flavors to create extraordinary cheeses.
Many WNC cheesemakers sell at Asheville area Tailgate Markets (North, East, West, River Arts District, City) and some makers offer hours at their creameries to buy directly from them.
